Thompson
As I grew up in a small town in Northwest Missouri, one of my
favorite memories is of my Aunt Sally baking cinnamon rolls for
friends and family around the holidays. Even when I was in college,
Aunt Sally would surprise us and come cook for my friends and
me. I looked forward to every visit because I knew there would
be delicious food and sweet treats. Even though those visits are
few and far between now, her kind, giving spirit gave me the desire
to put great tasting, healthy meals on the tables of busy families.
Ali Richardson
Growing up in rural Nebraska, dinnertime was always family time
in our household. Not a night went by that we didn't sit down
as a family and talk about our day. Watching my mom in the kitchen
everyday inspired me every bit as much as her gracious hospitality
to family and friends on special occasions. Now that she is no
longer with us, the values she instilled in me as a young girl
have given me the desire to get families back around the dinner
table enjoying each other's company.

Breakfast Sausage Casserole
This
was a recipe that a friend of ours gave us and we used on our
menu a few months back. It's perfect for what we were talking
about on the show because it can all be prepped and frozen and
then just popped in the oven for a special morning!

Cups Cooked Sausage (we use Jimmy Dean)
Refrigerated Pizza Dough (we use Pillsbury)
1 Cup Cheddar Cheese
1 Cup Mozzarella Cheese
1 1/2 Cups Egg
1/2 Cup Milk
1/4 Cup Red Bell Pepper
1/4 Cup Green Bell Pepper
3/4 tsp Oregano
1/4 tsp Pepper
First brown your sausage in a skillet over medium high heat breaking
apart as you cook (2 cups is right about a pound of uncooked sausage.)
Once browned drain grease and set aside for a moment. Spray a
9x13 pan with nonstick cooking spray such as PAM, unroll your
pizza dough and press into the bottom of the pan. Sprinkle sausage
over crust, sprinkle peppers over sasuage and then sprinkle on
both cheeses. Gather a bowl and mix together the egg, milk, oregano
and pepper, whisk well until incorporated. Pour egg mixture over
casserole evenly. At this point you may cover the casserole and
freeze until ready to bake if you wish. To bake casserole preheat
oven to 350 degrees. Cover casserole with foil and bake for 40
minutes, remove foil and bake an additional 10-15 minutes or until
cheese is golden brown and casserole is set throughout. If you
freeze your casserole you may bake straight from frozen, just
increase the cooking time by about 10-15 minutes. Enjoy!!
